Butcher is responsible for preparing meats and fish for Orchids at Palm Court, the Grille at Palm Court, and hotel banquet events.


  • Wrap, label, weigh, and price cuts of meat.
  • Cut, trim, bone, tie and grind meats, such as beef, pork, poultry and fish to prepare meat in cooking forms.
  • Estimate requirements and order/requisition meat supplies to maintain inventories.
  • Receive, inspect, and store meat upon delivery to ensure meat quality.
  • Record quality of meat received and issue to cooks and/or keep records of meat sales.
  • Negotiate with representatives from supply companies to determine order details. 


  • +2 years of fine dining experience
  • Diploma certification in a Culinary discipline a plus
  • Must be able to stand for long periods of time
  • Must be able to lift 50 lbs
  • Ability to work well under pressure in a fast paced, team environment
  • Must be flexible in regards to scheduling including weekends and/or holidays
  • Must be able to pass pre-employment drug test and background check
